Börek With Cotton Cheese:  An Absolute Favorite On Your Table

Ingredients:

  • 500 Grams of phyllo dough (yufka)
  • 250 Grams of Sütüm Gurme Cotton Cheese
  • 3 Eggs
  • Half a glass of oil
  • Half a glass of yoghurt
  • 1 Cup of milk
  • 1 Cup of baking soda
  • Half a bunch of parsley (optional)
  • Salt

Preparation:

  1. Place the Sütüm Gurme Cotton Cheese in a bowl and mash with a fork to mix well. Optionally, you can also add finely chopped parsley.
  2. Whisk the eggs in another bowl. Add oil, yoghurt, milk, and baking soda and stir. Add salt and stir well.
  3. Place the phyllo dough on the work surface. Brush each phyllo dough with the sauce mixture and spread a cotton cheese mortar in between. Then wrap the phyllo dough into a roll and cut the puff pastry in half.
  4. Arrange the börek on a greased baking sheet. Brush with the remaining sauce mixture.
  5. Bake in an oven preheated to 180 degrees for about 25–30 minutes until the phyllo dough is browned.
  6. Remove from the oven, let cool, slice, and serve.
